The Journey from Cherry to Bean: A Precision-Crafted Process
Producing exceptional coffee starts with the respect for the smallest detail. Our post-harvest process reflects decades of local wisdom refined through consistent innovation.
- Selective Harvesting
Harvest begins in September and runs through to May or June. Our farmers only pick cherries that are fully red and ripe, ensuring consistent sweetness and quality in every batch. This selective picking means up to 85% of the total yield is carefully chosen, no shortcuts. - Pulping on the Same Day
Cherries are pulped within hours after harvest to maintain freshness and avoid over-fermentation. Floating beans are discarded, ensuring only dense, healthy seeds proceed. - Overnight Fermentation
Fermentation is conducted naturally overnight, allowing the mucilage (fruit layer) to break down. This method preserves the acidity and clarity that Arabica Gayo is known for. - Careful Drying
Beans are sun-dried gradually to reduce moisture content to around 50%, while still in parchment form. This helps preserve their structure and complexity. - Wet Milling
A uniquely Indonesian method, wet hulling is performed when the bean still holds 25–35% moisture. It gives Gayo coffee its signature earthy, heavy body and tropical sweetness. - Sorting and Storage
After hulling, beans go through both machine grading and hand sorting to remove any defects. Storage is done in clean, odor-free facilities with proper ventilation, vital to preserving the fragrance and moisture balance of the beans.
